- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, white sugar, and brown sugar until creamy and fluffy.
- Add the whole egg, egg yolk, and vanilla extract. Mix until just combined.
- Gradually add the dry ingredients to the wet mix, stirring until no flour streaks remain.
- Stir in the chopped cherries and chocolate chips with a spatula.
- Scoop tablespoon-sized balls of dough and place them 2 inches apart on your tray.
- Bake for 10–12 minutes, until the edges are golden but centers still look soft.
- Let the cookies cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.
