Ingredients
  

  • 2 apples grated or finely minced apples
  • 2 large eggs
  • 100 ml neutral oil (like canola or sunflower)
  • 120 ml milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • 150 g mascabo or light brown sugar
  • 150 g all-purpose flour
  • 80 g rolled oats (not instant)
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • q.s. pinch of salt
  • q.s. optional thin apple slices and powdered sugar for topping

  • Mixing bowls
  • Spatula
  • Box grater or food processor
  • Cooling rack

Method
 

  1. In a large bowl, beat the eggs and sugar until pale and slightly fluffy.
  1. Gently pour in the oil, milk, and vanilla, stirring just until smooth.
  1. Add the grated apples to the wet mix and stir gently with a spatula.
  1. In a separate bowl, whisk together the flour, oats, cinnamon, baking powder, and salt.
  1. Sift this mixture over the apple batter and fold until no dry streaks remain.
  1. Pour the batter into a greased 8-inch baking pan and smooth the top.
  1. Arrange thin apple slices on top of the batter.
  1. Bake in a preheated oven at 180°C (350°F) for 45–50 minutes.
  1. Let the bake cool in the pan for at least 20 minutes before transferring to a wire rack.
  1. Once cool, dust with powdered sugar.
