Method
- Combine the dry ingredients (flour, sugar, salt, baking powder) in a large bowl and whisk until evenly distributed.
- Add cold butter to the dry mixture and rub it in using your fingers until it resembles coarse sand.
- Crack the egg into the bowl, add the vanilla extract, and mix until a soft dough forms. Cover with plastic wrap and let it rest in the fridge for 15 minutes.
- Roll out the dough into a rectangle about ¼ inch thick on a lightly floured surface. Place guava dulce strips along one side and roll it up carefully.
- Slice the roll into 1-inch pieces and place them on a parchment-lined baking sheet.
- Bake at 180°C (350°F) for about 20 minutes or until golden brown around the edges. Cool completely before serving.

Notes
If you’re missing an ingredient, you can substitute margarine for butter, or almond extract for vanilla. Guava jam or mango paste can work instead of guava dulce. Store cookies in an airtight container for up to 3 days; for longer storage, freeze unbaked slices and bake straight from the freezer. Dust cookies with powdered sugar for a festive look or package them in cute boxes for gifts. Don't skip the resting time as it helps with texture!
