- In a large bowl, whisk the eggs with the brown sugar until pale and fluffy, then add the oil, yogurt, and vanilla.
- Combine the dry ingredients with the wet mixture, folding gently until just mixed.
- Fold in the ½ cup of chopped nuts.
- Pour the batter into the prepared loaf pan and arrange the apple slices on top.
- Bake for 50–60 minutes until a toothpick comes out clean.
- Let the bread cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
