- Beat the egg yolks with sugar until pale and creamy.
- Gradually incorporate the mascarpone cheese, folding gently.
- Whip the cold cream until stiff peaks form and fold into the mascarpone mixture.
- Mix the espresso with chosen liquor (if using).
- Dip each ladyfinger into the coffee mixture and arrange them at the bottom of the mold, then add a layer of mascarpone cream on top.
- Repeat with more ladyfingers and cream, finishing with a generous dollop of cream.
- Chill the dessert in the fridge for at least 4 hours, preferably overnight, and sprinkle cocoa powder on top before serving.
